It’s Mother’s Day today & everyday at Rekado



YOUR favorite place for Filipino comfort food, Rekado, was built by two loving daughter to honor their mother. They grew up in a household where good food was always prepared by mom. Why not share it with everyone else? Thus, Rekado Filipino Comfort Cuisine was built.

It’s been a year since the modern Filipino restaurant opened its doors to the public. Today it has become one of the favorite places to dine in the city for many.

“Most of our diners come with their families. It’s what we always wanted for Rekado — to make dining a family affair. This just reminds us of how we always enjoy our food at home. But in this case, we’re doing the cooking, ” said the young entrepreneurs.

Today is the second Mother’s Day for celebration for Rekado and the young budding chef who has run the kitchen for a year now says, “It always makes me so happy and proud to be cooking for all the moms.”



All set for Mother's Day



For the day’s special honoree and their families, Rekado’s chef has whipped up four special dishes. “These will be formally launched on Mother’s Day and will be part of the regular menu. If by any chance Rekado can’t accommodate everyone on the special day or they made plans to dine elsewhere, we want to be able to serve them these new dishes whenever they visit us,” said the chef.

The new dishes that will end up on the regular menu are the Rekado Paella, Grand Pochero, Rekado Mixed Seafood and Callos.

Rekado’s version of paella uses fragrant Jasmine rice that is sautéed with their homemade chorizo crisps, then simmered in a boldly flavored broth and finished with shrimps and chicken. Each step in cooking this dish is seasoned finely so that every bite is a play of flavors of shrimps, chorizo and chicken. This is topped with a creamy chili and lime dressing that complements the flavors by providing acidity and added spice.

The Grand Pochero is prepared with beef shank, chicken quarter and pork belly braised until perfectly tender. Fatty beef shank gives the broth a deep, rich flavor from being carefully simmered for hours until all aromatics are perfectly blended. This is served with a creamy ensaladang talong, which is filled with layers of savory flavors that complement the meat in this dish. Carrots potatoes, garbanzos, cabbage for added texture, and the saging na saba adds sweetness to the dish.

The Rekado Mixed Seafood has local mussels, shrimps, malasugue, squid balls, fish balls and kikiam. These are cooked in a sweet and savory sauce made of variety of chilis. Bold flavors stem from a variety of aromatic Asian ingredients such as lemon grass and fish sauce. It surprises with a buttery finish.

Finally, the Callos. It’s all beef meat and tripe slow simmered with Chorizo El Rey Spanish chorizo in tomato sauce until perfectly tender. The slow cooking process brings out the natural flavors of the beef that gives the sauce a deep, rich flavor.

With the four new dishes for mom and the family enjoyed today and the coming days, it’s just like Mother’s Day everyday at Rekado Filipino Comfort Cuisine.
