When Nanaimo met Durian, they had a sinfully fabulous union. (No pun intended sa nanay mo).


If there is one dish that best represents this chef's attempt to fuse Canada and Davao, the Nanaimo Durian bars is it.

Nanaimo is a no bake cookie bar  named after the West Coast city of Nanaimo, British Columbia. It is traditionally made of wafer crumb-based layer topped by a layer of light vanilla or custard flavoured butter icing and topped with chocolate sheet.

For the on-going Canadian food fest at the Cafe Marco of Marco Polo Hotel, guest "Curiosity got the Chef" Chef Sharwin Tee, used the famous/infamous Southern fruit-- the Durian, as the filling of the Nanaimo bars. The result-- a divine confection with a Davao vibe. Perfectly sweetened durian custard complementing the bittersweet taste of the dark chocolate topping.

Trained at Vancouver's Pacific Institute of Culinary Arts, Chef Sherwin whipped up a spread using the best of both Canadian and Davao ingredients and describes his dishes as "using Canada's safe, fresh and high-quality food products fused with the warmth of the Filipinos."

Prior to serving his guests his food on the opening dinner celebration, the chef imposed a strict rule-- no one leaves until the stomach is full-- a tough rule to follow most especially if you're on a diet.

Joining the Durian Nanaimo Bars on my must try list on this Canadian food fest Must try is the rib-eye steak, the chef grilled it to perfection.
