Fearless forecast: Davao's new dining joint will lure in the discriminating caffeine addicts and the sweet tooth. But banish any worry, Davao foodies; the cafe's menu also lists an interesting lineup of savories that can tickle the palate—and fill the tummy.
Mori & Mill (Mori is "nature" in Japanese, and Mill represents craftsmanship) is "made in Davao, for Davao" and infuses locally sourced ingredients into the food and beverage preparation, and crafts them with intention and attention. It's a space that entices everyone to "pause, gather, and enjoy."

Restaurateurs Antony Ang, Jenny Ang, Karina Ang, and Kenneth Hao tap three "alchemists" to take charge of the cafe's essentials: Chef Decker Gocioco's kitchen highlights and plates Asian fusion savories; Coffee Master Jay Ross Roldan curates the signature coffees and specialty chocolate blends; and Pastry Chef Ginno Hernandez designs the lifestyle cakes and sweets.

Prior to opening day of Mori & Mill, a select few guests from various Davao sectors took part in the three-day food presentation and tasting event. Here are my top picks from the selection of food and drinks served on Day 2.
Savory: The Mori & Mill Bahn Mi Que (Viet-Mex Quesadilla paired with Lettuce and Nuoc Cham) an interesting take on the traditional Vietnamese sandwich. Tip: dive into the dish freshly served to enjoy the crisp of the toasted tortilla, which mimics the crunch of the French bread.

Coffee: A curated selection of coffee beans is spotlighted on the pour-over coffee menu, but the hot and cold coffee blends and coffee cocktails will pique the interest of caffeine freaks. Do try the Iced Sakura Sevio Chocolate (think: sipping a cooling coffee, chocolate, and strawberry concoction at a Hanami on a lovely, sunny spring day in Japan).

Desserts: The Suhara (Pomelo & Earl Grey Tea Mousse) scores high on my list with its light, creamy texture and hint of sweetness, which makes it perfect for my personal preference. But if your saccharine tolerance is high, then go for the other desserts, like the gelatos (Turon, Hokkaido Milk, Dark Chocolate, Matcha Strawberry). Across the board, these frozen desserts scale high on my sweetness level, which, perhaps, sugar lovers will adore.

What will make me go back to Mori & Mill? The Egg Tart: silky-smooth, lightly sweetened egg custard on buttery, flaky crust. While it's on Level 3 (Level 10 as highest) of my sweetness profile, cooling it camouflages the sugary taste. It's a perfect coffee pairing.
