FOR the 78th Araw ng Dabaw celebration, Seda Abreeza flew in an Italian guest chef to showcase his culinary skills in time for the city’s fiesta.
Salvatore de Vincentis, whose experience as executive chef has taken him to different cities across the globe, is designing Seda’s Misto buffet spread for dinner with a prime selection of Italian wines to match.

“I am excited by this stint. The traditional Italian regional dishes will be presented in a modern and creative way that will please the eyes and the taste buds,” said the chef as he presented a preview of his spread for the media in a recent gathering.
His version of Caprese is individually prepared in a glass. The cream flavored with fresh mozzarella and layered over slices of fresh tomatoes is drizzled with tomato-flavored foam and topped with a basil leaf as garnish. “The layering of colors represent the Italian flag,” he shared.

“Chef Salvatore will be drawing from the aromas of his childhood in Sorrento where he would assist in the kitchens of his grandmother and uncle, a restaurateur. At Seda, the chef promises to remain true to the traditional ways of preparing well-lived regional dishes whipped up from the freshest of ingredients to ensure distinct and authentic Italian flavors,” said the Seda hotel general manager, Ken Kapulong.

For the Araw ng Davao spread, Chef Salvatore will be working with Seda’s kitchen team in preparing for a menu intended for the season. Expect both local favorites and Italian dishes on the spread.
“I always cook with all my heart because diners can sense a chef’s passion in the way the food is presented. Sit, eat and enjoy,” said the chef.
